Experimental veg box curry

Serves 4 hungry people.

We had some things in our veg box this week (tomatoes, chard, cauliflower, onions) which seemed like good ingredients for a saag style curry. This turned out way better than I expected. I did cheat and use (decent quality) curry powder though.



  1. Chop onions, garlic, ginger, fry in a splash of oil until translucent with half the curry powder.
  2. Chop the tomatoes into 6, add to the pan along with the tinned tomatoes and the rest of the curry powder.
  3. Simmer gently until tomatoes soften (15-20 mins).
  4. Blend with stick blender until smooth.
  5. Chop cauliflower into decent size florets, add to pan. Chop chicken and add to pan. Coarsely chop spinach/chard, add to pan.
  6. Simmer for 45-60 mins.

Serve with rice/naan.
