Experimental veg box curry
Serves 4 hungry people.
We had some things in our veg box this week (tomatoes, chard, cauliflower, onions) which seemed like good ingredients for a saag style curry. This turned out way better than I expected. I did cheat and use (decent quality) curry powder though.
Ingredients
- 500g chicken
- 1 small cauliflower
- 6 medium tomatoes
- 1 tin plum tomatoes
- 2 'thumbs' of ginger
- 4 tsp of curry powder
- 2 small onions
- 4 cloves garlic
- 200g spinach/chard
Instructions
- Chop onions, garlic, ginger, fry in a splash of oil until translucent with half the curry powder.
- Chop the tomatoes into 6, add to the pan along with the tinned tomatoes and the rest of the curry powder.
- Simmer gently until tomatoes soften (15-20 mins).
- Blend with stick blender until smooth.
- Chop cauliflower into decent size florets, add to pan. Chop chicken and add to pan. Coarsely chop spinach/chard, add to pan.
- Simmer for 45-60 mins.
Serve with rice/naan.
