Meatball, Tomato and Mascarpone Pasta
Ingredients
- 500g passata / chopped tomatoes
- 1 onion
- 3 cloves garlic
- basil and oregano to taste
- 500g pasta
- 400g pack of meatballs
- 3 heaped tablespoons of mascarpone
Instructions
- Start heating the water for the pasta, and add the pasta when it reaches a rolling boil.
- Fry meatballs in olive oil until they're soft and slightly browned, set aside in a bowl.
- Finely chop onion and garlic, fry in olive oil until browned
- Add tomato, basil and oregano and heat until bubbling. If you like your sauce smooth then blend with a stick blender.
- Add the meatballs back to the sauce.
- Add the mascarpone to the tomato sauce, stir in until it's melted.
- Add the pasta to the sauce, mix and serve.
