Meatball, Tomato and Mascarpone Pasta



  1. Start heating the water for the pasta, and add the pasta when it reaches a rolling boil.
  2. Fry meatballs in olive oil until they're soft and slightly browned, set aside in a bowl.
  3. Finely chop onion and garlic, fry in olive oil until browned
  4. Add tomato, basil and oregano and heat until bubbling. If you like your sauce smooth then blend with a stick blender.
  5. Add the meatballs back to the sauce.
  6. Add the mascarpone to the tomato sauce, stir in until it's melted.
  7. Add the pasta to the sauce, mix and serve.
