Spaghetti Bolognese Recipe
This is a variation of my dad's recipe. This should comfortably feed 6-8 people. Leftovers make great lasagne.
- 2 tbsp olive oil
- 2 onions
- 3 400g tins of good quality chopped or plum tomatoes.
- 2 lbs beef mince
- 5-6 large carrots
- 4-5 cloves garlic
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1/2 tube of tomato puree
- 1/2 bottle of red wine
Cook the beef mince in a large pan on a medium heat until browned and any water has evaporated. Put aside in a bowl, and return the pan to the heat.
Add the olive oil to the pan and gently fry onions, garlic, carrots, until the onions turn translucent. Add the wine and tomatoes and tomato puree, stir well, cover and simmer for 15 minutes.
Blend the contents of the pan in batches (or with a stick blender) until smooth. Add the minced beef back to the pan. Cover pan and leave to simmer while cooking the pasta.
